4-5 apples, peeled, cored, and thinly sliced (any variety of apple will do)
5 tablespoons granulated sugar
2 teaspoons cinnamon
(Mix all together and set aside)

2 cups granulated sugar
1 cup vegetable oil
2 tablespoons orange juice
2 teaspoons vanilla extract
4 large eggs, slightly beaten
(Mix all of the above in a big bowl until sugar is dissolved, and set aside)

3 cups all-purpose flour
3 teaspoons baking powder
(Whisk to blend)

Directions:

Preheat oven to 350º.

Spray a 10" bundt pan or tube pan with non-stick baking spray, such as Baker's Joy). Whisk flour and baking powder into wet ingredients and blend. Pour batter in thirds, alternating batter and apples, and ending with apples on top. Bake for one hour and 20-30 minutes. Let cool for 5-10 minutes. Loosen sides and center of cake and invert onto serving plate. Let cool to room temperature.

This cake tastes even better the next day. It was given to me by a Jewish colleague back in the 1970s, when we worked together in the Intensive Care Unit of Greater Baltimore Medical Center.
