3 Tbsp Olive Oil
28 ounces chopped tomatoes
14 ounces chopped onion
3 large garlic cloves
2 tsp ground cumin
1 Tbsp hot paprika
1-1/2 tsp dried oregano
1 tsp salt
15 ounces mixed summer squash, cut into 1-inch cubes
1 pound mixed summer beans, cut into 2-inch lengths
3 bell peppers, preferably red, orange and yellow, cut into 1-inch squares
10 ounces corn kernels
1/4 cup chopped fresh flat-leaf parsley

Directions:
Directions:
Heat olive oil in large, heavy pot. Add the onions and garlic and stir to coat. Cooker over moderate heat, stirring occasionally, until softened and lightly colored, about 5 minutes.

Stir the cumin, paprika, oregano, and salt into the onions. Pour in the chopped tomatoes and 2 cups of water. Add the summer squash, summer beans, and bell peppers and bring to a simmer. Cover the pot and cook over moderate heat for 15 minutes. Stir in the corn, cover and continue cooking until all the vegetables are tender, about 5 minutes longer.

Add parley just before serving.
