3 lbs red potatoes
Chicken Stock(to boil potatoes in)
1/4 cup butter
1/4 cup flour
4 cups fat free half and half
4 cups skim milk
1 (16 oz) package 2% Velveeta Cheese
1 tsp. hot sauce
1/2 lb bacon, fried crisp
1 cup cheddar cheese, shredded
1 tsp. white pepper
1 tsp. garlic powder

Directions:
Directions:
Dice unpeeled red potatoes into 1/2 inch cubes.
Place in large saucepan; cover with chicken stock and bring to boil.
Let Boil for 20 minutes or tender
In a separate pan, combine melted butter and flour; mixing until smooth.
Place over low heat and gradually add half-and-half and skim milk, stirring constantly.
Continue to stir until smooth and liquid begins to thicken. If need be add 1/2 cup skim milk with 1/4 cup cornstarch to thicken soup.
Add Velveeta cheese and stir until melted.
Stir in pepper, garlic powder and hot sauce.
Pour into crock pot and keep on warm
Sprinkle bowl of soup with crumbled bacon and shredded cheese.
