1 Tbs Olive oil
1 Lg red onion- chopped
2 garlic clove- minced
3 Lg tomato cut into small chunks
1 C chicken broth
1/4 c heavy cream
Basil- 1/4 c chopped

Directions:
Directions:
Heat oil over med heat in a large sauce pot. Cook onion & garlic, season with salt & pepper until soft (4-6min)
Add tomatoes & increase heat to break tomatoes down (4-6min).
Add broth & 1 C water & simmer (10min).
Add basil.
In a blender- in small batches puree soup.
Return to pot & cook 1 min. Mix cream into soup- cook 1 min. Add more salt & pepper to taste.
