Peach Cobbler Supreme Recipe

Pastry for a double crust pie (can make or buy box mix)

8 cups fresh peaches
2 cups sugar
2-4 Tbls flour
tsp nutmeg
1 tsp almond extract
⅓ cup melted margarine

Peaches Preparation:
Combine peaches, flour, sugar, nutmeg and set aside until syrup forms.
Bring Peaches to a boil. Reduce the heat and cook 10 minutes.
Remove from heat and blend in extract and butter.

Crust Preparation:
Roll out half of pie dough to ⅛ inch thick.
Cut the dough to fit 2 square casserole dishes.
Bake the crust at 475 for 12 minutes or until brown.

Spoon peaches into prepared crust.

Roll out remaining pastry dough and cut into inch strips.
Arrange in lattice design over top of peaches.

Return to oven 10-15 minutes or until lightly browned.
