Preheat oven to 350

1.5 lb ground beef
1 egg
1 sleeve of Ritz Crackers crushed
1/2 tsp of salt
1/2 tsp of pepper
1 onion chopped

1 can of tomato soup

Directions:
Directions:
Mix all ingredients with a half a can of tomato soup. Mix by hand until well mixed. Spray the bottom of a roasting pan or casserole with Pam and lightly salt with Kosher Salt. Shape mixture into a loaf in the pan. Top with other half of can of tomato soup- spread with spoon to cover, add 1/2 to 3/4 can of water to bottom of pan. Bake for 1 hour in 350 over lightly covered with foil. At end of hour remove foil and continue at 350 for 15 minutes. Allow to cool for 5-10 minutes before removing and slicing on serving platter.

This was Mom's favorite meatloaf recipe. Her recipe was at least double this to make sure there was enough to feed everyone and that there were left overs for Dad to have meat loaf sandwiches in his lunch.
