30lbs (approx) tomatoes cleaned and cut up

1 white onion
1 green pepper
2 Tbsp Olive oil
2 Tbsp salt
2 tsp Pepper
1 Tbsp fresh Oregano
4-5 fresh basil leaves chopped
Any other spices of your choice.

Saute the Onions and Peppers until soft with Olive Oil

Strain the tomatoes with Victorio strainer and pour juice into large pot.

Have it come to a slow boil, stirring often.  Lower heat to low and allow to cook down to at least half.

If you decide to can tomato sauce, as I did.  Prepare your jars and lids.

Once the sauce is ready for jars, add 3 Tbsp Lemon Juice to 1 tsp of Salt for preserving to each quart.  Add the tomato sauce.  Wipe the lip of jars, seal and place in bath water for at least 25 minutes over mid to high heat.
