Cake:
1 cup sugar
1 cup cooking oil
3 eggs
1/2 tsp vanilla
1 1/3 cups all purpose flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
2 cups grated carrots

Icing:
8 oz cream cheese
1/2 cup butter
2 tsp vanilla
4 cups icing sugar

Cake:
1. Beat sugar and cooking oil. Beat in eggs one at a time. Add vanilla.
2. Measure in next 5 ingredients. Stir to mix.
3. Stir in grated carrot.
4. Turn into greased 9x13 pan or bundt pan. Bake at 350 degrees for 35-45 minutes until an inserted toothpick comes out clean.
5. Cool and add icing.

Icing:
1. Beat cream cheese, butter and vanilla well.
2. Add sugar gradually, beating until fluffy.
3. Spread over cake.
