Crust

Vegetable oil spray
parchment or wax paper
flour
1 pkg. plain yellow cake mix
¼ cup water
¼ cup packed light brown sugar
4 Tbsp. Butter melted
2 large eggs

Topping
16 oz. Cool Whip
2 cup sliced strawberries
2 cups slices bananas
1 cup sliced kiwi
1 cup seedless grapes halved

Glaze
½ cup apricot preserves
2 Tbsp. water

Preheat oven to 350º
Mist 2 12-14 inch pizza pans or 1 16½x11½x1 inch jelly roll pan.
Line with parchment paper or wax paper.
Mist with spray and dust with flour

Place cake mix, water, brown sugar, water and eggs in mixing bowl. Blend with mixer 1-2 minutes. Dough will be stiff and sticky.
With rubber spatula spread dough on bottom and sides or pan. Bake until crust is light brown and feels firm in center (18-22 minutes).

Spread cooled crust with cool whip and arrange fruit on top. Place apricot preserves and water in small sauce pan over low heat and stir until mixture warms. Remove from heat and strain. Brush strained glaze over fruit. Place in refrigerator and chill uncovered at least one hour

Store wrapped in refrigerator for up to one week.
