1 large red onion chopped
1 chipotle pepper in adobo sauce chopped
3 cloves garlic
1/4 cup olive oil
2 tbsp oregano
1/2 tsp cumin
1 tbsp brown sugar
3 bay leaves
Salt & pepper
1 can tomato paste
1 can diced tomatoes
1 can red kidney beans
1 box veggie broth
Zest & juice from one lime (optional)

1. Heat the olive oil on medium heat in a large-ish soup pot. Place the onions, chipotle pepper and garlic in the pan and stir for about two minutes, until onions start to cook. These onions had better make some NOISE once they hit the pan, or else the oil isn’t hot enough.
2. Add the brown sugar to start caramelizing the onions. Stir, then add the oregano and cumin, and spice things up with a lil’ salt n’ pepper.
3. Once the onion is looking translucent and has caramelized a bit (8-10 minutes cooking time), add the tomato paste and stir. Once it starts to sizzle again, add the kidney beans, diced tomatoes, veggie broth, and bay leaves. Amp up the heat to a 7 (no more than that), stir, and let it come to a nice calm bubbling boil. Then turn the heat down to a 2 (simmmmmerrrrrrrrr), cover, and let it simmer ~honey~ for 20 minutes. Check on it 10 minutes in, stir, taste, add more salt if need be.
4. Just before serving, add some lime juice and zest (totally optional) and serve topped with chopped scallions and sliced avocado. Leftovers are real good cold or hot, so enjoy babes.
