2 Cups Dried Green Split Peas
4 Cups Potatoes, Cubed
2 Cups Carrots, Sliced
2 Cups Onion (1 Large), Chopped
2 Cups Celery, Diced
2-4 Cloves Garlic, Minced
Salt and Pepper to taste
8-10 Cups Vegetable Broth
2 Tbsp. Olive Oil
1-2 Bay Leaves
Fresh Parsley
½ Tsp. Thyme
1 Tsp. Rosemary

1. Completely submerge a package of dried split peas in a bowl filled with water. Soak for at least 2 hours, best if soaked over night. (Soaking legumes and grains before cooking releases phytates which are harmful. Soaking them also makes them more easily digestible).
2. Wash potatoes, stab holes in potatoes with fork or knife. Cook in microwave for 5-7 minutes to get a little soft. Chop all vegetables. Steam carrots and celery first because they take longer to cook. Sauté onion with a little oil, then garlic, add celery, carrot, and potatoes to finish cooking them. Season with salt and pepper.
3. Add vegetable broth, dried peas, and seasoning. Bring to a boil for 5 minutes then reduce to medium heat and cover until vegetables are all fork tender.
4. Taste and check seasonings. Add more if desired.
5. Purée soup with immersion blender until desired thickness.

Vanessa first made this soup because we had a bunch of canned peas, and canned potatoes and carrots. She made her own base and put everything together and blended. It was a great meal! Nice Creamy soup without the heavy cream.
You can always throw these ingredients into a crockpot to cook. And if you don't have time or haven't been shopping for fresh ingredients you can always resort back to using canned vegetables. Delicious way to use up all those cans laying around!
