Ingredients:  
1 pound Italian Sausage
3 cans (8-oz) tomato paste
¼ cup olive oil
1 can Caponata (eggplant relish/appetizer)
1 tsp crushed dry sweet basil
1 tsp finely minced rosemary
2 Tbls minced parsley
2 bay leaves
2 garlic cloves
1 large onion
¼ cup olive oil

Directions:
Directions:
Heat olive oil in sauce pan. Add chopped onion and garlic.
Sauté until lightly golden. Add sausage and cook 8 minutes.
Add tomato sauce, paste and 1 quart water. Mix thoroughly.

Add Caponata, basil, rosemary, parsley and bay leaves. Stir
Season with salt and pepper to taste.
Bring to boil. Lower heat.
Simmer covered for 1 hour stirring occasionally.

Serve over cooked spaghetti.
