1 #2 can pineapple chunks (in syrup)
¼ cup brown sugar
1½ pound lean pork shoulder cut into 2½ inch strips
2 Tbls cornstarch
¼ cup vinegar
¼ cup pineapple syrup
2 - 3 Tbls Soy Sauce
1 small green peppers cut into strips
¼ cup thinly sliced onions

Directions:
Directions:
Brown pork in small amount of fat. Add ½ cup water.
Cover and simmer til tender (about 1 hour) till tender. Drain.
Combine sugar and cornstarch, add pineapple syrup, vinegar and soy sauce.
Cook and stir until thickened.
Add pineapple chunks, green pepper and onion.
Cook 2-3 minutes.

Serve over hot, fluffy rice
Makes 6 servings
