4 - 6 pound Brisket Roast

Barbecue Sauce:
1 bottle (14 oz) catsup
¼ cup chili sauce
¾ cups brown sugar
¾ cup Vinegar
¾ cup water

¼ cup steak sauce
¼ cup prepared mustard
2 Tbls Woustershire sauce
1 Tbls Soy Sauce
2 Tbls Lemon Juice

Mix together and pour over brisket

Serves 4-6

Brisket:
Marinate overnight with Lowery's Seasoning salt, garlic salt,"liquid smoke" and parsley.
Turn several times. Keep covered

Next day - pour off marinade and cook covered 1 hour per pound at 275 degrees.
The last hour - pour off grease and add barbecue sauce.
Sauce can be made with the recipe above or purchased.

Barbecue Sauce:
Mix all ingredients and pour over Brisket.
Return to oven for 1-1½t hours

FYI: This type of roast will shrink considerably due to the high fat content which "cooks off "during long and low heat of the cooking period. Be sure to allow for this shrinkage when determining how much meat to allow per person.

Great when served with potatoes or garlic cheese grits and baked beans !
