1½ cups oil
2 cups sugar
4 eggs, separated
4 Tbsp hot water
2¼ cups flour
¼ cup cornstarch
3 tsp baking powder
½ tsp salt
1 tsp cinnamon
1 tsp nutmeg
1½ cups grated zucchini
1 cup pecans or walnuts, chopped fine or grated
1 tsp vanilla

Directions:
Directions:
Sift dry ingredients together. Combine oil and sugar; beat until smooth. Add egg yolks and blend. Add hot water and dry ingredients. Stir in zucchini, nuts & vanilla; beat well. Beat egg whites until stiff; fold into mixture. Turn into three 8-inch cake pans or one large angel food pan or one large oblong and one small pan. Bake 25 to 30 minutes at 350º. Longer baking for larger pan. Cool and frost.

Tip: 2½ cups less 2 Tbsp of cake flour may be substituted for the 2¼ cups flour and ¼ cup cornstarch.

Susy: All the while that we lived at 515 Cheney St, in Reno, NV, Glen and Bessie Shaff were our next door neighbors. They were wonderful friends, even to me, an elementary school age girl. This recipe has been sitting in my mom's recipe box for about 50 years. It's time to share it!
