1½ sticks butter
3 stalks celery - chopped
1 bell pepper - chopped
1 bunch green onions - chopped
1 yellow onion - chopped
3 - 4 pods fresh garlic - chopped
⅓ cup flour
½ cup water
2 pounds Crayfish or Shrimp tails
4 Tbls parsley - chopped
12 oz package wide egg noodles
1 pound Hot Mexican Velveeta Cheese
1 carton of Half and Half cream
Parmesan Cheese
Egg Noodles

Directions:
Directions:
Melt butter in a Dutch Oven on stove top.
Sauté celery, bell pepper, green onions and garlic for 10 minutes
Add flour and blend well. Add water and blend well
Add crayfish or shrimp and parsley.
Cook 15 - 20 minutes on low heat.

Prepare egg noodles per package directions. Set Aside.

Add cheese cut up in small pieces. Blend well
Add Half and Half, salt and pepper to taste.
Mix cooked noodles with shrimp mixture.

Place in buttered casserole dish. Top with Parmesan cheese
Bake at 350º uncovered for 20 min or hot and bubbly

You can substitute cooked chicken, shrimp, lobster or crab-meat.
Also sautéed fresh sliced mushrooms and artichoke hearts can be added.
Green spinach noodles can substitute for egg noodles
