2 pounds medium size shrimp
1 stick butter
cup olive oil
1 tsp lemon juice
cup scallions - chopped
1 Tbls garlic - chopped fine
4 Tbls fresh Italian parsley - chopped fine

Shell and clean shrimp. Dry on paper towels.
Use shallow pan just large enough for 1 layer of shrimp.
In this pan, melt butter and add other ingredients.
Place in oven on low heat for 10 minutes.
Remove and add shrimp into pan - Turn them in the mixture to coat well.

Broil 4 inches from heat for 5 minutes. Turn shrimp broil another 5-10 minutes.

Serve over rice with tossed salad and hard rolls
