5 chicken breasts
2 heads of broccoli
3 cups cooked rice
2 cans of cream of mushroom soup
2 onions
1 cup mayo
1½ cups cheddar cheese
2 Tbsp butter
1 Tbsp lemon juice
1 Tbsp curry powder
salt and pepper to taste

Directions:
Directions:
Steam broccoli until crisp/tender. Boil chicken with 1 chopped onion while you sauté the other onion. Prepare 3 cups of cooked rice. Grease a casserole dish with butter. Line the bottom with the rice, then broccoli, then top with the cubed, cooked chicken.

Cover with the mixture of sautéed onion, soup, mayonnaise, lemon juice, curry powder, salt, pepper and 1 cup grated cheese. Sprinkle ½ cup of grated cheese over the top.

Bake uncovered at 350º for 25 minutes. Enjoy!

The Chicken Broccoli Casserole has been a favorite in all of our families growing up. While there have been many variations in how much broccoli, soup, curry or cheese to use, Lauren and I feel that we have come up with the best result! :-) Enjoy our family favorite!
