2 cups flour
¼ tsp salt
3 tsp baking powder
¾ cup sugar
¼ cup chopped candied citron
1¼ cups currants
2 Tbsp candied cherries, chopped
2 Tbsp candied lemon peel, chopped
½ cup chopped walnuts
2 eggs, beaten
1 cup sweet milk
2 Tbsp melted margarine or oil

Directions:
Directions:
Sift flour, salt and baking powder into a large bowl. Add sugar, citron, currant, candied cherries and lemon peel; stir. Add walnuts; stir. Mix beaten eggs with sweet milk and melted margarine or oil, stir slightly into flour and fruit mixture; don't overmix. Pour into greased and wax paper lined 4X8-inch loaf pan; let stand 30 minutes, then bake in 350º oven for 1 hour.

Note: Citron is an actual semitropical fruit that's similar to a lemon but with thicker skin. To make candied citron, the citron is blanched in water, boiled in sugar syrup and dried.
