Mocha Filling

Cookies:
1 cup soft butter
⅓ cup powered sugar
¼ cup unsweetened cocoa
1 ½ cups flour

Mocha Filling:
1 tbsp. butter
1 ( oz.) square unsweetened chocolate
1 cup powered sugar
1 tsp vanilla
1 to 2 tbsp. hot coffee

Directions:
Directions:
Heat oven to 350º. Lightly grease cookie sheets. Beat the butter and powered sugar and cocoa in a large bowl until fluffy. Blend in the flour until smooth. Shape dough into marble sized balls. Place 2 inched apart oto the cookie sheets. Press an indentation in each with your thumb. Bake 10 to 12 minutes or until set. Prepare the filling and while the cookies are warm spoon ½ tsp filling into each.


Mocha Filling:
Melt the butter and chocolate in a small pan over low heat. Stir until melted. Blend in the powered sugar, vanilla and enough coffee to make a smooth filling.
