Season meat put on shallow rack, no lid.
Sear 425 degrees for 15 minutes.
Turn down to 325 degrees for a 15 pound roast.
Use a meat thermometer to determine how done you want it
and how long to cook.
Take out of oven
Let cool under tin foil for 15 minutes
Then put back into a turned off oven to hold meat at the temperature you want it.

Makes lots of fat. So if you are making a gravy remove some of the drippings.

3 hours 125 degrees is medium rare
130 degrees is medium
