2 Cans Diced Tomato's (1-28 oz can and 1-14 ½ oz can)
1 Cucumber peeled and chopped
1 Onion Diced
1 Green Bell Pepper, Seeded and Diced
10 Pitted Ripe (Black) Olives Sliced and Halved
½ Teaspoon Minced Garlic (or to taste)
1 Cup V8 Juice
1 Tablespoon Red Wine Vinegar
3 Tablespoons Olive Oil
1 Teaspoon Salt (or to taste)
1 Teaspoon Pepper (or to taste)
