Ingredients:  
Ingredients:  
1-1.5 pounds Italian sausage (I like turkey)
2 cloves of garlic, minced
1 medium onion, chopped
1 cup white wine
16 oz canned pumpkin
1 1/2 tablespoon sage, julienned
Salt and pepper
1/2 cup cream/milk
Parmesan cheese
1 pound of pasta (rigatoni is great for this)

Directions:
Directions:
Sauté onion and garlic in a large pan.
Add sausage and cook on medium/high heat until brown.
Deglaze the pan with white wine and cook for a few minutes.
Add pumpkin, sage, salt and pepper.
Lower heat and simmer for 20 minutes (cook pasta while sauce simmers).
Stir cream into sauce.
Mix cooked pasta into sauce.
Serve immediately with Parmesan on top.
