8 to 12 eggs or enough to make 1 1/4 cups of whites
1 1/2 cups sugar, divided in thirds
1/8 tsp salt
1 1/2 tsp Cream of Tartar
1 cup cake flour
1 tsp almond extract

Directions:
Directions:
Sift flour and 1/2 cup of the sugar 3 times and set aside.

Beat white with cream of tartar until stiff but not dry. Beat in 1/2 cup of the sugar.

Beat yolks in a small bowl until fluffy and lemon-colored. Beat in 1/2 cup of sugar. Add salt and almond flavoring.

Fold yolk mixture into the whites. Sprinkle the flour mixture over the egg mixture and fold together, using about a third of the flour mixture at a time.

Pour into ungreased tube pan and bake at 325 degrees for about 55 minutes or until done.

Invert pan and cool for about an hour before removing from pan.
