Pancakes Recipe

1 egg
1 cup all-purpose flour
3/4 cup milk
2 tbsp vegetable oil
1 tbsp sugar (optional)
3 tsp baking powder
1/2 tsp salt

Beat egg with hand beater until fluffy; beat in remaining ingredients just until smooth. Add more milk for thinner pancakes. Pour about 3 tablespoons of batter from tip of large spoon onto hot griddle. Cook until puffed and dry around edges. Turn and cook other side until golden brown.

Substitute 1 cup buttermilk for the milk. Decrease baking powder to 1 teaspoon and beat in 1/2 teaspoon baking soda.
