PIE FILLING:
3 egg yolks
8 oz softened cream cheese
4-5 oz Key West Lime Juice (get in the mixed drink section)
14 oz can sweetened condensed milk

PIE CRUST:
1 1/4 cup graham cracker pie crumbs
1/4 cup sugar
1/3 cup melted butter

Preheat oven 350º

PIE CRUST FIRST:

Mix crumbs, sugar and butter with fork until well mixed. Press by hand into a 9" pie pan. Bake at 350º for 6 minutes. Let cool.

PIE FILLING:

In blender mix cream cheese, condensed milk and egg yolks until smooth. Add lime juice and mix. Pour into cooled pie crust and bake for 10 minutes. Cool for 1 hour then refrigerate. Top with fresh whipped cream and serve.
