2 or 3 (7 oz) cans whole green Chili peppers, drained
or 1 (27 oz.) can
8 oz Monterey Jack cheese shredded
8 oz cheddar shredded
( Mexican blend cheese or pepper jack also works)
2 eggs beaten
5 oz evaporated milk
1/2 c milk
2 T all-purpose flour
1 (8oz) can of tomato sauce.

Directions:
Directions:
Preheat oven to 350º. Spray bottom of 7X11 baking dish with cooking spray. Lay 1/2 of the chilies evenly in bottom of dish. Sprinkle with 1/2 of the cheeses. Cover with another layer of chilies and cheese. In a bowl mix together the eggs, milk and flour and pour over the top of the chilies and cheese.
Bake in the preheated oven for 30 minutes. Remove from oven and pour tomato sauce evenly over the top, and continue to bake for another 15 minutes. Sprinkle with more cheese before serving.
