Lombardi (Marsala) Chicken Recipe

1 lb boneless skinless chicken breast
3-4 T flour
3 T butter
i c Marsala wine
1/3 c chicken broth
1/3 c shredded Mozzarella cheese
1/3 c shredded Parmesan

Directions:
Directions:
Cut chicken breast in half lengthwise. Pound chicken between two pieces of plastic wrap to 1/4 inch thick. Coat in flour.
In a 12 inch skillet melt 1 T butter over medium heat. Cook chicken 2 minutes on each side and transfer to a 2 quart baking dish. Repeat with butter and remaining chicken.
Melt remaining 1 T butter in skillet. Add mushrooms and cook and stir until tender. Add wine, broth, and a dash of salt and pepper. Bring to a boil and boil gently until mixture is reduced to 1/2 c including mushrooms. Pour over chicken
Combine the cheeses and green onions and sprinkle over chicken.
Bake uncovered in a 375º oven for 20 minutes.
