1 Tbsp olive oil
1/2 pound ground beef steak
1/4 pound fresh chorizo sausage (casing removed)
3/4 cup finely chopped onion
2 cloves finely chopped garlic
1/4 tsp ground cumin
1/2 tsp salt
1/2 tsp freshly ground black pepper

Crust:
1 cup butter
1 pkg cream cheese, softened
1/2 tsp salt
2 cup flour

Glaze:
1 egg yolk
2 tsp milk

Filling Preparation:
1. In a medium size skillet, heat olive oil over high heat.
2. Add beef, chorizo, onion, garlic, cumin, salt and pepper.
3. Cook for 5-7 minutes. Set aside and let filling cool.

When ready to bake, preheat oven to 375º.

Crust Preparation:
1. Mix crust ingredients in food processor until dough starts to form a ball. Chill dough for at least 1 hour.
2. Roll out dough. Use a 3” round cookie cutter to cut circles for appetizers. Moisten edges of pastry with water.
3. Put approximately 1 rounded Tbsp filling on half of the round. Fold the other half over.
4. Using a fork, press down on the edge of the dough to make sure it is sealed and flute the edges.
5. Freeze if you make it in advance.
6. Arrange empanadas on a nonstick baking sheet.
7. Whisk egg in a small bowl with milk. Brush the top of each empanada with the egg wash.

Bake at 375 º for 15 minutes until golden. Serve warm.

You can make the empanadas a day ahead and freeze them. Bake them when ready to serve.
