4-6 chicken breasts or 1 pork tenderloin

Marinade:
1 cup soy
5-6 oz sweet chili sauce (I use Trader Joe's)
1 TB sesame oil
2-3 cloves of garlic
1 fresh lemon, squeezed

Salsa:
2 cups watermelon, diced very small
1/3 cup yellow bell pepper, diced
2 TB green onion, minced
1-2 TB cilantro, minced
1/2 to 1 TB fresh ginger, grated finely
2 tsp sweet cooking rice wine (Kikkoman Aji-Mirin)
1 TB fresh lime juice
1/4 tsp salt
1/2 jalapeno, minced (add more or less depending on how hot you like)

Directions:
Directions:
Place the chicken or pork in the marinade over night.
BBQ chicken or pork and serve with watermelon salsa.

Best served with fried rice and asian cabbage salad.
