(This all depends on how much sauce you would like to make and how big your jar is. Start small and add)

1 – 2 heads of garlic (chopped finely)

Put in jar; pour olive oil to cover garlic

Add salt, pepper, parsley

(Optional is oregano which I do not use and it gives the sauce a different taste)

This is an all-purpose garlic sauce.

This is an all-purpose garlic sauce.
Can stay in the refrigerator for weeks. Every time you take it out and use it, you zap in microwave to liquefy it. Can refill olive oil as needed and add more crushed garlic if needed. Remember every time you zap it, the garlic will cook so do not be concerned when it looks on the brown side. Therefore, you can either add to that more garlic, oil and seasoning or throw out and make more. (But this is of course if you like the garlic and the garlic sauce).

You can use this in mashed potatoes, on rice, steamed vegetables, over pasta, on meat, fish and chicken. I usually spoon some over veggies and rice and sometimes put a spoon in mashed potatoes.
