1 pd. hamburger
1 clove garlic minced
1 T basil
1 1/2 tsp. salt
1 quart tomatoes
2 6 oz. cans tomato paste
10 oz. lasagna noodles
2 eggs
3 cups Cottage cheese
1/2 cup Parmesan cheese
2 T parsley flakes
1 tsp. salt
1/2 tsp. pepper
1 pd. sliced Mozzarella

Brown meat, spoon off excess fat
Add next 5 ingredients.
Simmer uncovered for 30 minutes. stir occasionally
Cook noodles in large amount of boil salted water, drain and rinse.
Beat eggs, add remaining ingredients except Mozzarella cheese.
Layer half noodles in pammed dish spread 1/2 Parmesan filling add 1/2 Mozzarella cheese and 1/2 meat
Repeat
Bake 375 for 30 minutes to 45 minutes or hot and bubbly
Let sit out for a while before cutting

Shawnie Dance shared this recipe with me. We had it a lot when the kids where little because I used to bottle tomatoes and it was a great way to use my tomatoes.Still easier to buy one at Costco. But back then it wasn't an option. What did I ever do without Costco. We had a store similar called Price Savers. But it went out of business. Probably because Costco was coming.
