1 package Eckeridge Smoked Sausage
2 15-oz cans light kidney beans (dark or light)
2 15-oz cans water
2 bay leaves
Salt & pepper to taste

Directions:
Directions:
Slice sausage into ½ inch round slices.
Brown sausage in little olive oil & minced garlic
Add red beans (and their juice) and water. Bring to rapid boil.
Add bay leaves.

Cook covered about 30 minutes at low-medium heat.
Uncover and continue to simmer until the sauce thickens.

Serve over white rice
