Ingredients: Cookies: 1 ¼ cups brown sugar 1 cup soft butter 2 eggs 1 tsp vanilla 3 cups flour 1 tsp baking soda
Filling: ¾ cup dried cranberries ¾ orange juice ½ cup sugar 8 oz. chopped dates 1 tsp vanilla ¼ cup chopped walnuts

Directions:Cookies: Combine brown sugar nd butter in a large bowl and beat at medium until well mixed. Add eggs and vanilla and beat 1 to 2 minutes. Reduce to low and add flour and baking soda. Beat 1 to 2 minutes. Cover and refrigerate until firm. At least 1 hour.
Heat oven to 350º. Roll dough on floured surface one third at a time to ⅛ thickness. Cut 15 circles with a 2 inch round cookie cutter. Place 2 inches apart on an ungreased cookie sheet. Top each round with 2 tsps. filling spreading nearly to edges. Cut 15 2 ¼ inch circles with 2 ¼ inch round cookie cutter from remaining dough. Make a small cutout with a very small cookie cutter in tops of the larger circles. Place on top of filling and press the edges together with a fork.
Bake 8 to 10 minutes or until lightly browned.
Filling: Combine all filling ingredients except walnuts in a 2 quart pan. Cook over medium heat stirring occasionally until the mixture comes to a boil. Continue boiling stirring occasionally until thickened (6 to 8 minutes). Stir in the walnuts. Cover and refrigerate until ready to use. |
