1 can chickpeas
2 Tbsp. red onion, finely chopped

2 tsp. Italian Seasoning
3 Tbsp. extra virgin olive oil
3 Tbsp red wine vinegar
Kosher salt, to taste
Freshly ground black pepper

Directions:
Directions:
Open and drain the chickpeas. Rinse.
Chop the red onion.

Put the chickpeas, onion, Italian seasoning, salt, pepper, olive oil and vinegar in a bowl.
Mix well.

Refrigerate before serving.

OK, so it couldn't be any easier. Throw it all in a bowl and away you go. Very tasty.
