Ingredients:  
Spinach, Romine or other Lettuce of choice
Salt & Pepper
Sliced Almonds - Toasted
1 can Manderin Orange Slices
Juice from canned oranges
Croutons

Dressing:
Olive Oil
Red Wine vinegar
Mandarin Orange juice
Parmesan or Romano Cheese - grated

Directions:
Directions:
Wash and tear lettuce into pieces.
Place lettuce in paper towels in refrigerator to drain and crisp
Toast Almonds - Carefully (watch them as they can burn real quickly!)

Mix Olive Oil, Wine Vinegar together to taste and as needed for amount of lettuce.
(I usually use ½ cup olive oil and 1-2 cap fuls of wine vinegar)
Add juice from Mandarin oranges can (½ cup - to taste)
Salt & Pepper to taste. Parmesan Cheese to taste

Mix lettuce, oranges, almonds croutons (and anything else you want to add)
Add Parmesan cheese to taste. Cool in refrigerator

Just before serving .... add the dressing and toss
