Bread Pudding


Ingredients:

10 oz loaf French Bread, stale
4 c milk
2 c sugar
8 T butter, melted
3 eggs

Anything Goes (3-4 c) total of extras
2 T vanilla
1 c raisins
1 c coconut flakes
1 c chopped pecans
1 tsp cinnamon
1 tsp nutmeg

Note - for this recipe you do not preheat the oven.

Combine all ingredients. Mixture should be very moist but not soupy. Pour into buttered 13x9 inch baking dish. Place on middle rack of pre-heated oven. Bake approximately 1 hr 15 minutes, until top is golden brown. Serve warm with sauce.
 

Bread Pudding Sauce - Amaretto Sauce

½ c butter
1½ c powdered sugar
1 large egg yolk, whole
½ c Amaretto

Directions:

Cream butter and sugar over medium heat until all butter is absorbed.

Remove from heat and blend in egg yolk. Pour in liquor (amaretto, bourbon, rum) to your own taste, stirring constantly. Sauce will thicken as it cools. Serve warm over bread pudding.

Notes: Depending on type of bread Pudding you may substitute liquor for something that complements the bread pudding. For basic bread pudding use bourbon, for pina colada bread pudding use rum, for Aunt Ellen's specialty use amaretto.

Variations for Anything Goes Ingredients:
1. Pina Colada Bread Pudding: Coco Lopez, coconut, pineapple (totals 3-4 c), serve with rum sauce
2. Almond, Chocolate Chip Bread Pudding (Aunt Ellen's Specialty): 1 1/2 c chocolate chips, 3 c slivered almonds, substitute almond extract for vanilla
