Filling:
-3 pkgs 8-oz cream cheese
-1 cup sugar
-1/4 cup dark brown sugar
-1 (15-16oz) can pumpkin
-2 eggs
-2/3 cup evaporated milk
-2 Tbs. cornstarch
-2 1/2 tsp cinnamon
-1 Tbs nutmeg

-1 graham cracker crust

Topping:
16oz sour cream
1/4 cup sugar
1 tsp vanilla

Directions:
Directions:
1) Preheat oven to 350
2) Start with Filling ingredients. Beat 1st 3 ingredients until fluffy. Add in the next 3, beat. Then beat in the next 3.
3) pour into the graham cracker crust
4) Cover the crust, leaving the pie open with aluminum foil (this will help keep the crust from burning).
5) Bake for 75 minutes (You want the center set)
6) Beat together topping ingredients
7) Remove aluminum foil
8) Spread topping on top of warm cheesecake.
9) Bake another 5 min or so.
10) Enjoy!
