Fresh tomatoes
Onions
Various Herbs - Basil, Rosemary, Thyme, Parsley or whatever you have growing
Can also sub in dried herbs and/or an Italian Herb mix
Olive Oil 1 T
Salt/Pepper

Directions:
Directions:
Fill slow cooker 2/3 full with tomatoes that have been washed and cut in quarters. (cherry or patio tomatoes can be left whole). Add 1-2 onions and a nice selection of herbs that have been chopped or snipped. You may also use dried herbs. Add salt and pepper to taste. Add oil. Cook for 15 hours on low. Then put through blender or food processor. Bag and freeze or use within a few days.
