3/4 cup shortening (I use unsalted butter)
1 cup brown sugar, packed
1 egg
1/4 cup molasses
2 1/4 cup all-purpose flour
1/4 teaspoon salt
2 teaspoons baking soda
1/2 teaspoon cloves
1 teaspoon cinnamon
1 teaspoon gingeer
Granulated sugar for rolling, before baking

Directions:
Directions:
In a mixing bowl, mix shortening, brown sugar, egg, and molasses until smooth.
In a separate bowl, sift together flour, salt, baking soda, cloves, cinnamon and ginger.
Mix dry ingredients into the wet ingredients until they are well mixed. Refrigerate for at least one hour, or overnight.

Preheat oven to 375º.
Roll dough by teaspoonfuls into balls. Roll balls in granulated sugar. Use a fork to flatten balls in a gridiron pattern.

Bake for 12-15 minutes. Do not let bottom of cookies get too dark.
