1) 12 large tomatoes - In pot boiling H2O till skins start to split.Then in cold H2O till not too hot to hold,Peel skins
off.Cut in smaller pieces if large.
2) 4 large onions - Skin and chop in food processor, small pieces but not pureed.
3) 10 sweet peppers (various colours) - Skin and chop in food processor, small pieces but not pureed.
4) 4-6 jalapeno peppers minced - Cut in small food processor or hand mince fine.Use gloves as can burn eyes/hand
cuts.
5) 4 cloves garlic minced. Cut in small food processor or hand mince fine.
ADD: 2 TBSP salt (not pickling salt) , 1/2 tsp turmeric, 1 TBSP chilli powder

**** Add all to large thick bottomed pot and simmer 1 hour. This recipe doubles well.

ADD: 1/2 c sugar & cornstarch, 1 c vinegar. Mix all in a bowl, add some of the simmered veggies to bowl to mix, then add to pot. simmer 5 more minutes.

= 7-12 pints. Process in hot water bath 20 min. Boil sealer lids 5 minutes before using for jars.
Jalapenos very variable. I year very hot the next year not . 2017 we used 6 jalop with seeds and 6 without seeds for double batch.
