Ingredients:  
1-2 lb. flank steak (or skirt steak)
1 box Parmesan or Saffron risotto, prepared per package
Chimichurri sauce (recipe is under Sauces)

Directions:
Directions:
1. Brush flank steak with olive oil and leave at room temperature for 20 minutes. Meanwhile, heat grill.

2. Prepare risotto according to the package directions.

3. Put steak on the grill and cook until medium, taker off the grill and let rest for 15 minutes. Slice thinly on the bias.

4. Spoon risotto on plate, top with steak slices and top with chimichurri sauce.


Note: This makes for a great appetizer as well
