1 medium zucchini
1 medium yellow squash
½ cup red onion, chopped
¼ tsp. crushed red pepper flakes
1 tsp. dried oregano
1 tsp. dried basil
2 tsp. minced garlic
grape tomatoes, sliced
store bought pesto sauce
grated Parmesan cheese
Extra Virgin Olive Oil

Directions:
Directions:
1. With a spiralizer, spiralize squash and zucchini with medium noodle blade. Place zucchini between paper towels and press out any excess moisture.

2. Heat olive oil in large saute pan. Add onions, crushed red pepper, herbs and garlic and saute until soft. Add tomatoes and cook for another 2-3 minutes.

3. Add zucchini and squash to pan and mix thoroughly. Coat pasta & vegetables with pesto sauce.

4. Transfer to plate and top with Parmesan cheese.

Note: You can also add roasted cauliflower florets, cooked brussels sprouts, steamed broccoli, or pine nuts.
