Ingredients: Per Pork Tenderloin: olive oil, approx. 1-2 Tbsp per each side of tenderloin 2 fresh garlic cloves Progresso Italian breadcrumbs salt and pepper to taste 1 cup grated parmesan

Directions:Prep pork tenderloin. Place tenderloin on a sheet of foil or parchment paper. Trim the 2x3 thin shiny tissue near the thick part of the tenderloin. Generously cover all sides of the tenderloin with olive oil. Press garlic on one side of the tenderloin and spread across the tenderloin lengthwise. Apply fresh ground pepper, salt and dust the tenderloin with breadcrumbs. Rollover and repeat. Wrap tenderloin up in the paper or foil and set aside for 10-25 minutes. Preheat grill on low heat 350-400º.
Place pork tenderloin(s) directly on the grill and cook for 8 minutes then turn and cook for another 7 minutes on the other side, then turn to a side that has not been grill down for 4 minutes. Tenderloin should be pink and will continue to cook once removed from the grill. Try not to over cook or it will dry out quickly. Prepare a sheet of foil and sprinkle a bead of parmesan to place the tenderloin on when taking off the grill. Sprinkle parmesan liberally on the top of the tenderloin and loosely wrap and close the foil over the tenderloin so the cheese will melt 2-3 minutes. Open and cut in ¾ inch slices for serving. |
