1 lb. cod fillets
¼ c. Fresh pineapple, cored and peeled
¼ c. Fresh mango, peeled and pitted
¼ c. Red onions
2 Tbsp. Fresh cilantro
2 Tbsp. Lime juice
⅛ c. apple juice
2 Tbsp. Cajon seasoning
⅛ c. Olive oil
1 Tbsp. Orange juice
¼ c. Papaya, peeled and cubed

Directions:
Directions:
Prepare mango salsa as follows ; cut the pineapple, mango and papaya
into small cubes. Place in the bowl and add chopped red onions, cilantro
lime juice, apple juice, salt and pepper. Refrigerate at least 30 mins
before serving. Whisk together Cajun seasoning, olive oil and orange juice
and pour over thawed fish. Refrigerate at least 2 hours before cooking.
Bake in a preheated oven at 450 ° for 8 to 10 mins. Fish should flake with
fork when done. Serve fish topped with mango salsa.
