2 LB Fresh Red Snapper, gutted and bled
8 Fresh Shrimp, peeled-deveined
1 Onion
4 Sprigs green onion
4 Cloves garlic
1 large tomato
½ C. Panko bread crumbs
2-3 Lemons, Meyers juicy
1 Stick of butter
Fresh parsley, chopped
Fresh cilantro, chopped
Paprika
tarragon, rosemary and thyme to taste
½ C. Olive oil

Clean fish and ensure all scales are removed (scrape with spoon). Set aside. Clean, shell and devein shrimp. Set aside. Coat both fish and shrimp lightly with olive oil and herbs, place in refrigerator for 1 hour.

Preheat oven to 350.

Peel 2 lemons and remove seeds. Puree lemon and 1 stick of melted butter. Chop and add garlic to lemon-butter mixture.

Remove fish and shrimp from the refrigerator. Stuff fish with shrimp, ¼ of butter mixture and ½ parsley, herbs, onion, green onion. Top fish with remaining butter mixture and herbs and lightly coat with bread crumbs. Bake for 15 minutes. Remove from oven, add squeezed lemon juice and diced tomatoes. Return to oven for additional 10 - 15 minutes. Check often to ensure fish does not overcook. Broil for last 2 minutes for desired crispness.

I love fish, but really don't like to fish, I tend to feel sorry for the fish on the hook and I find that "patience is not always a virtue of mine"! But fishing evokes fond memories of Dad-Grandpa Warren. He would take us fishing in the Keys many weekends when we were still small children. Dad would say, 'fishy, fishy in the brook, papa catch 'em on a hook, mama fry 'em in the pan, baby eat 'em like a man!" Those words and memories are lasting.

I recall funny memories like putting my hand in a shrimp bait bucket and learning that they bite! Learning that when in a small boat and you hook into a barracuda, when dad says let go, you let go; and that just because you catch a fish, doesn't mean you get to keep it- recalling the time I snagged a beautiful parrot fish that was quickly hijacked by a pelican flying above.

I was always freaked out by squirming worms...just yucky from my perspective. And, I don't think Sis and I ever baited our own hooks! So between untangling lines, teaching the fine art of casting, and baiting hooks, all while dad watched his own line take a bend....he was quite the fishing multi tasker and he didn't miss much! He was patient and never seemed to be bothered by our whining!

So my lessons learned: be patient; persevere; make lasting memories from small moments; risk; learn from your elders; your possessions might be gone in an instant, so what, memories last a life time!
