1 cup sifted flour
1/4 cup sugar
1 tablespoon baking powder
3/4 teaspoon salt
1 cup yellow corn meal
1 egg, well-beaten
1 cup milk
5 tablespoons shortening, melted and cooled

Directions:
Directions:
Preheat oven to 425º. Grease bottom of a 8" x 8" pan.

Sift first 4 ingredients. Mix in corn meal. Blend egg, milk, and shortening until thoroughly mixed. Add to dry ingredients and beat until smooth. Put in greased pan and bake for 20 minutes.
