Ingredients: 13 to 14 graham crackers, finely crumbled 1/4 cup butter, melted 4 (3 ounce) packages cream cheese 2 eggs, beaten 1 teaspoon lemon juice, fresh squeezed 1 teaspoon grated lemon rind 3/4 cup sugar 2 teaspoons vanilla 1 cup sour cream 3-1/2 tablespoons sugar 1 teaspoon vanilla

Directions:Preheat oven to 350º. In a medium bowl, thoroughly combine cracker crumbs and butter. Pat mixture into a 9 inch pie pan. In a large bowl, combine cream cheese, eggs, lemon juice and rind, sugar and vanilla. Beat until light and frothy. Pour into graham cracker crust and bake for 25 to 30 minutes. Blend sour cream with sugar and vanilla - mix until smooth. Remove pie from oven and allow to cool for 5 minutes, then pour sour cream mixture over pie. Return to oven and bake 10 minutes longer. Allow to cool to room temperature. Place in refrigerator at least 5 hours before serving. |

Notes: The biggest birthday treat every year was getting to choose the kind of dessert I wanted my mom to make. The only dessert I can ever remember choosing, year after year, was "Cream Cheese Pie" - a denser (and easier to make) version of the classic cheesecake. It is absolutely YUMMY and very rich!!
