12 slices bread
1 C fresh or thawed frozen fruit
2 C milk
2 8 oz. package of cream cheese
12 eggs
1/2 C maple syrup (additional for garnish)

Directions:
Cut bread into 1 " cubes. Place half the cubes in a buttered 9 x 13 glass baking dish. Cut cream cheese into 1/2 " cubes and layer on top of bread. Top with all the fruit and the remaining bread. In a large bowl, mix together eggs and milk and 1/2 C. syrup. Pour over bread mixture. Using a spatula, press the ingredients down into the liquid. Cover pan with aluminum foil and refrigerate 8 hours or overnight. Remove pan from refrigerator 30 minutes before baking. Heat oven to 350 degrees. Place covered casserole in the oven and bake 45 minutes. Remove foil and bake until top is golden brown and mixture is set in center - 25-30 minutes. Serve with additional maple syrup or fruit syrups and vanilla yogurt.

Ginger Peach: Use fresh peach chunks. Add 12 tsp. ground ginger to egg mixture before pouring over bread. Top with 1/2 C. chopped cashews before refrigerating.

Blueberry Spice: Use fresh or thawed frozen blueberries. Add 1 tsp. cinnamon to egg mixture before pouring over bread.

Cherry Almond: Use pitted cherries. Add 1 tsp. almond extract to egg mixture before pouring over bread. Top casserole with 1/2 C. sliced almonds before refrigerating.
