12 eggs
2 cans Ortega chopped green chiles
1 tsp. baking powder
1 cube melted butter
1 12-oz package Colby and Jack Cheese
1/2 tsp. salt
1 24 oz. large curd cottage cheese
1/3 C. flour
4-5 roma tomatoes, chopped or sliced (optional)

Directions:

Beat eggs until lemon yellow. Add all ingredients and blend well. Bake at 350 degrees in a greased 9 x 13 baking dish for 35 minutes or until golden brown. Serve with salsa if you like a little spice.
